Ingredients:

  • 500g of cleaned chicken gizzards;
  • 1 medium onion, chopped;
  • 2 cloves of garlic, minced;
  • 1/2 red bell pepper, chopped;
  • 1/2 green bell pepper, chopped;
  • 1 tomato, chopped;
  • 2 tablespoons of olive oil;
  • 1/2 cup of dry white wine;
  • 1 bay leaf;
  • 1 teaspoon of paprika;
  • Salt and pepper to taste.

Instructions:

  1. Clean the chicken gizzards with cold running water and remove any unwanted parts, such as cartilage or fat. Then, dry them with a paper towel or clean dishcloth.
  2. Season the gizzards with salt and pepper to taste, rubbing the seasoning mixture all over the surface of the gizzards. Set aside.
  3. In a large pot, heat the olive oil over medium heat. Add the gizzards and brown for about 5 minutes, stirring occasionally to brown evenly on all sides. If necessary, cook the gizzards in batches so they do not get crowded and can brown properly.
  4. Add the chopped onion, minced garlic, chopped bell peppers, and chopped tomato to the pot with the gizzards. Sauté for about 10 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.
  5. Add the dry white wine to the pot with the gizzards and vegetables. Stir well to release the browned bits from the pot. Add the bay leaf and paprika. Let cook for about 2 minutes for the wine to evaporate and the flavor to concentrate.
  6. Add about 1/2 cup of water to the pot with the gizzards and vegetables. Stir well and let cook over low heat for another 15-20 minutes until the gizzards are tender and the sauce thickens. Stir occasionally and, if necessary, add more water during cooking to maintain the liquid level in the pot.
  7. Taste the sauce and adjust the seasoning, adding more salt and pepper if necessary.
  8. Serve the hot gizzards in a small plate or bowl, drizzled with the sauce from the pot. You can garnish with chopped fresh parsley if desired.
