Take your taste buds on a trip to Switzerland with these mouthwatering Rösti (Swiss potato pancakes)!

Ingredients:

  • 1kg potatoes, peeled and grated;
  • 1 medium onion, chopped;
  • 1 tablespoon butter;
  • Salt and pepper to taste;
  • Vegetable oil for frying.

Instructions:

  1. Grate the potatoes and onion with a medium-sized grater. Place them in a colander and let them rest for about 10 minutes. Then, squeeze them with your hands or in a clean dish towel to remove excess liquid.
  2. Season the potato and onion mixture with salt and pepper to taste and mix well.
  3. In a large skillet, melt the butter over medium-high heat.
  4. Add the potato and onion mixture to the skillet, pressing down to form an even layer. Cook for about 15-20 minutes until the bottom is golden brown and crispy.
  5. Use a spatula to flip the rösti and cook on the other side until golden brown.
  6. Remove the rösti from the skillet and let it drain on paper towels to remove excess oil.
  7. Repeat the process with the remaining potato and onion mixture, adding more vegetable oil to the skillet as needed.
  8. If desired, you can add extra ingredients such as grated cheese, ham, or herbs to add more flavor.
  9. Serve the rösti hot, accompanied by a sauce of your choice or with a green salad.
