<p>Where did this sudden interest come from?  Soul food recipes have always enjoyed a long tradition. A popular southern cuisine that dates back to Pre-Civil war slavery. The food that slaves invented, nurtured and preserved for over 3 centuries, is now a billion dollar industry.</p>
<p>Yes, this popular southern cuisine has come from food the slave master didn’t want to a lucrative industry. The soul food recipes industry includes cookbook publishing, restaurants, food manufacturing, television cooking shows, and food marketing. Now can you see why major food manufactures are elbowing for a piece of the soul food recipe market.</p>
<p>But what’s fueling this sudden surge in popularity?  The big surge now is the economy. <p>Cooking has increased in popularity over the past few years.</p>
<p>There is a plethora of TV chefs who have made it cool to cook. They have published books crammed full of recipes and ideas to bring food to life and to tickle your taste buds. </p>
<p>There is even one chef who has taken food to a whole new level; namely Heston Blumenthal. Some of the things Heston Blumenthal does with food will make you step back in absolute amazement.</p>
<p>But what about Joe Public? Can he cook? Of course.</p>
<p>All you need is a half decent kitchen, a few recipes, pots, pans, knives and a big blob of enthusiasm to get you on your way. If cooking is completely new to you it is best to start with something fairly simple such as Chilli Chicken Stir Fry. </p>
<p>Stir fries are very quick to make. They are also very healthy as they mostly consist of vegetables and meat and use very little oil. A wok is the best pan to use when preparing a stir fry, but if you do not have one to hand, a frying pan will do just as well.</p>
<p>One of the most important aspects of cooking is timing as it is important for all of the ingredients to be ready at the same time. If the dish you are creating is made up of several ingredients which are being prepared in different pans, and you have something else in the oven,  you need to know how to control and adjust the temperature of each to ensure that everything is cooked correctly at the same time.</p>
<p>In the early days you may have a few mishaps and burn the odd egg, but don&#8217;t let it get to you. If you learn from your mistakes you will eventually learn to love to cook.</p>
<p>Once you become more confident in the kitchen and understand how food combinations work, you will be able to create your own recipes &#8211; and this is when the real fun begins. If you can open up your cupboard and pick out a range of ingredients and come up with something wonderful, you know you can cook!</p>

<p>Mexican cooking at home doesn&#8217;t have to an impossible task to accomplish. Try using the following kitchen equipment for the next in-home mexican meal.</p>
<p><strong>Comal:</strong> Basically, a comal is a cast iron griddle and is used without oil. It’s flat with a handle and is used for making tortillas and roasting foods that require no oil. Mexican comals also can be made of clay.</p>
<p><strong><br />Molcajete and Tejolote:</strong> Mortar and Pestle, these are used for crushing and grinding herbs, spices and seeds. The bowl and grinder are made from porous volcanic rock and are still used today. You can also make traditional Mexican salsa in the Molcajete and Tejolote.</p>
<p><strong>Prensa (Tortilla Press):</strong> A tortilla press can be metal or wood, with two hinged plates and a handle. A tortilla press is used to flatten the dough for making tortillas.</p>
<p><strong>Tamale Steamer:</strong> Tamale Steamers can be purchased at any Mexican cuisine store or market or you can make one yourself. Using a large enough stock pot to fit a metal colander lined with foil in the bottom, pour about an inch of water in the pot. The foil keeps the tamales from touching the water. Place the tamales in the colander and cover with a clean kitchen towel. Cover the pot tightly with a lid.</p>
<p><strong>Cazuela:</strong> a clay pot or bowl still used in Mexico today for boiling corn, stews and beans. Though many Mexican households now use Olla Express (Pressure Cooker) to make beans, they still place the beans in a cazuela for the final few minutes of cooking to give beans that authentic Mexican flavor.</p>
<p><strong>Metate y Mano (Hand Grinder):</strong> This tool looks like a short 3 legged table with a concave surface about the size of a platter. A large cylinder of stone is used for grinding spices, herbs and seeds. You can also find larger versions made for sitting at. Metate y Mano is made from stone or lava rock and is still used today in many Mexican households.</p>
<p><strong>Molinillo (Wood Whisk or Stirrer):</strong> This ancient tool is used to create foam in hot chocolate. Place between your hands and rotate the whisk back and forth briskly. Molinillos can be plain or highly decorated.</p>
<p><strong>Olla</strong>: A bean pot made of clay. Most Olla’s are beautifully decorated and glazed. Cooking beans in an olla gives beans a far superior taste than cooking them in metal pans or even a slow cooker. Olla’s look beautiful sitting on the counter when not in use and make a great gift. Fill the pot with bags of beans and seasoning and give to your friends or relatives who love authentic Mexican cooking.</p>

Going meatless even for just two days a week positively impacts health as it promotes weight loss and reduces your risk for cardiovascular diseases and certain cancers. Vegetarian recipes are easy on the pocket, too, compared to meat recipes. And if you care enough for Mother Earth, you&#8217;d be happy to know that going vegetarian will greatly reduce your carbon footprint. The meat industry is responsible for a portion of the manmade greenhouse gas emissions that is now making the world such a polluted place.</p>
<p>Vegetarian recipes are surprisingly easy to prepare. Flavor them with simple dressings, and you&#8217;re good to go. To get yourself started, stock your ref with vegetarian ingredients. Shop for mixed greens, romaine or spinach in ready-to-prepare packages. Frozen green peas, beans and edamame or green soy beans are also common ingredients in vegetarian dishes. Fruits, fresh or frozen, are also vegetarian staples.</p>
<p>For breakfast, try this oatmeal recipe: Bring 16 oz water to a boil. Put 3 ½ oz old fashioned rolled oats for five minutes. Cook it uncovered over medium heat, stirring occasionally. In a cereal bowl, combine 4 oz frozen blueberries, 4 oz frozen raspberries and 1 tbsp ground flax seed. Pour the cooked oats on top of the berries and enjoy!</p>
<p>A simple salad you might want to try is cucumber salad with peas. Simply combine 3 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice, a teaspoon of dried oregano and ground pepper in a large bowl. Add about 4 cups of peeled and diced cucumbers, a can of black-eyed peas, 2/3 cup of red bell pepper, half a cup of feta cheese, ¼ cup red onion and about 2 tablespoons of olives. Toss ingredients to coat them well. They can be served at room temperature or chilled.</p>
<p>For a light mid-afternoon snack, you can try blending a banana, an apple and some strawberries together for a filling sugar-free beverage.</p>
<p>The best way to cook vegetables is to steam them. By cooking veggies over boiling water, the nutrients are retained and are not dissolved away in the water- as what happens when you boil them. A steamer is simply a pot with a lid and some sort of &#8220;platform&#8221; that fits inside it where the vegetables are placed. The holes allow the steam to reach the vegetables. Before steaming the vegetables, make sure that you cut them in bite size pieces and divide them in groups, using cooking time as your grouping criteria. Potatoes, carrots and brussel sprouts take a long time to steam while bell peppers and spinach cook only for a short time. Steam those which take a long time first. Use a fork to test if they&#8217;re tender enough to eat. You can also steam whole potatoes or beets and bigger slices of vegetables although this can take a much longer (10-15 minutes).</p>

<p>The aroma of food, dishes clanging in the background, a relaxed casual atmosphere. As you look into the kitchen you see the flames rising from the pans, chefs making the plates look like just right. Friend and family at our table talking about the days events. Remembering the great times had in the past. These moments are a treasure in our hearts.</p>
<p>That is, until the bill comes. You can&#8217;t get out of a fine dinning restaurant for under 0 theses days. And that&#8217;s just for two, don&#8217;t even think of bringing the kids without cashing your paycheck first. The high cost of eating out limits these times to only special occasions.</p>

<p> </p>
<p><strong>&#8211;Olive Garden Fried Mozzarella&#8211;</strong></p>
<p>1 pound block of mozzarella cheese</p>
<p>2 eggs, beaten</p>
<p>1/4 cup water</p>
<p>1 1/2 cups Italian bread crumbs</p>
<p>1/2 teaspoon granulated garlic</p>
<p>1/2 teaspoon dried oregano</p>
<p>1/2 teaspoon dried basil</p>
<p>2/3 cup flour</p>
<p>1/3 cup corn starch</p>
<p> </p>
<p>Slice the block of cheese lengthwise into about 1/2 inch sections. Cut each section in half.</p>
<p>Beat the eggs with water and set aside. Mix the bread crumbs, garlic, oregano, and basil and set aside. Blend the flour with corn starch and set aside.</p>
<p>Heat vegetable oil for deep frying to 350F. Dip cheese in flour then in egg wash and then coat with bread crumbs. Place carefully in hot oil and fry until golden brown. This should only take a matter of seconds, so you need to watch them closely.</p>
<p>Drain on brown paper bags and serve with your favorite pasta sauce that has been warmed.</p>
<p> </p>
<p> <strong>&#8211;Red Lobster&#8217;s Crab Stuffed Mushrooms&#8211;</strong></p>
<p> 1 pound fresh mushrooms, approximately 35-40</p>
<p>1/4 cup celery, finely chopped</p>
<p>2 tablespoons onion, finely chopped</p>
<p>2 tablespoons red bell pepper, finely chopped</p>
<p>1/2 pound crab claw meat</p>
<p>2 cups oyster crackers crushed</p>
<p>1/2 cup cheddar cheese, shredded</p>
<p>1/4 teaspoon garlic powder</p>
<p>1/2 teaspoon Old Bay Seasoning</p>
<p>1/4 teaspoon black pepper, ground</p>
<p>1/4 teaspoon salt</p>
<p>1 egg</p>
<p>1/2 cup water</p>
<p>6 white cheddar cheese, slices</p>
<p> </p>
<p>1) Preheat oven to 400 degrees</p>
<p>2) Saute celery, onion, and pepper in butter for 2 minutes, transfer to a plate and cool in the refrigerator</p>
<p>3) While vegetables cool, wash mushrooms and remove stems</p>
<p>4) Set caps to the side and finely chop half of the stems. Discard the other half of the stems or use elsewhere</p>
<p>5) Combine the sauteed vegetables, chopped mushroom stems, and all other ingredients (except cheese slices) and mix well</p>
<p>6) Place mushroom caps in individual buttered casseroles or baking dishes (about 6 caps each)</p>
<p>7) Spoon 1 teaspoon of stuffing into each mushroom</p>

<p>9) Bake in oven for 12-15 minutes until cheese is lightly browned.</p>

<p>5 oz. chicken breast</p>
<p>Italian Dressing</p>
<p>12 inch flour tortilla</p>
<p>margarine</p>
<p>1 cup shredded monterey jack/cheddar cheese</p>
<p>1 Tablespoon tomatoes, diced</p>
<p>1 Tablespoon jalapeno peppers, diced</p>
<p>Cajun Seasoning (to taste)</p>
<p>1/2 cup shredded lettuce</p>
<p>1/4 cup diced tomatoes</p>

<p> </p>
<p>Place chicken breast in a bowl with enough Italian dressing to coat; allow to marinate 30 minutes, refrigerated. Grill marinated chicken until done in a lightly oiled pan. Cut into 3/4&#8243; pieces and set aside.</p>
<p>Brush one side of tortilla with margarine and place in frying pan over medium heat. On one half of tortilla, add cheese,</p>
<p>1 Tbls. tomatoes, peppers, and Cajun seasoning in that order.</p>
<p>Make sure to spread to the edge of the half. Top with diced chicken, fold empty tortilla side on top, and flip over in pan so that cheese is on top of chicken. Cook until very warm throughout.</p>
<p>Remove from pan to serving plate and cut into six equal wedges on one side of plate. On the other side put lettuce, topped with 1/4 cup tomatoes, and then topped with sour cream.</p>
<p>Serve your favorite salsa in a small bowl on the side.</p>

<p><strong>&#8211;Cracker Barrel&#8217;s Hashbrown Casserole&#8211;</strong></p>
<p>2 lbs. frozen hashbrowns</p>
<p>1/2 cup melted butter</p>
<p>1 can cream of chicken soup</p>
<p>1/2 cup chopped onion</p>
<p>2 cups grated cheddar</p>
<p>1 tsp. salt</p>
<p>1/4 tsp. pepper</p>
<p>2 cups crushed cornflakes</p>
<p>1/4 cup melted butter</p>
<p>DEFROST hashbrowns.<br />COMBINE next 7 ingr. and mix with hashbrowns.<br />PUT all in a 3 qt. casserole.<br />SAUTE cornflakes in butter and sprinkle on top.<br />COVER and BAKE at 350 for about 40 min.</p>

<p> </p>
<p><strong>&#8211;Cracker Barrel&#8217;s Cherry Chocolate Cobbler&#8211;</strong></p>
<p>1-1/2 cups flour</p>
<p>1/2 cups sugar</p>
<p>2 teaspoons baking powder</p>
<p>1/2 teaspoon salt</p>
<p>1/4 cups butter</p>
<p>1 (6 oz.) pkg. Nestle&#8217;s semi-sweet chocolate morsels</p>
<p>1 egg</p>
<p>1 (21 oz.) can cherry pie filling</p>
<p>1/2 cups nuts, finely chopped</p>
<p>Preheat oven to 350F. In large bowl, combine flour, sugar, baking<br />powder, salt and butter; cut with pastry blender until crumbs are<br />size of large peas. Melt over hot (not boiling) water, Nestle&#8217;s<br />semi-sweet chocolate morsels. Remove from heat and cool slightly<br />at room temperature (about 5 minutes).</p>
<p>Add milk and egg to melted chocolate and mix well. Blend chocolate into flour mixture.</p>
<p>Spread cherry pie filling in bottom of 2 quart casserole. Drop chocolate<br />batter randomly over cherries. Sprinkle with chopped nuts.<br />Bake at 350 F for 40 &#8211; 45 minutes. Serve warm with heavy cream.</p>
