BAKING


Description: Baking with spice blends and rubs is the healthiest method of preparation as it can be done without adding any oil or fats. Baking is a technique of cooking food by dry heat over a specific period of time, usually in an oven. The dry heat of baking causes its outer surfaces to brown, giving it an attractive appearance and partially sealing in the food’s moisture. To create a moister piece of food, bake at a lower temperature for a slightly longer period of time.

Instructions: Simply coat your favorite spice blend or rub onto your meat or seafood and set in refrigerator for 2 hours. Remove the seasoned food from refrigerator and let it sit at room temperature for several minutes before proceeding with your desired cooking method.Cover the inside of a baking pan or sheet with aluminum foil. Then, place wire rack on top of your baking pan or sheet. This will allow any drippings to collect onto the foil below, allowing for easier clean up. Place the prepared meat or seafood on top of the rack, and bake in a pre-heated oven (see recipes for specified cooking times). What could be easier?

Notes: Let meat cool 5-7 minutes before cutting to retain moisture. During the cooking process, heat drives meat’s juices from the surface as it cooks and the juices gather in the center and the center becomes saturated. Letting meats “rest” before slicing allows these juices to slowly seep back towards the surface, resulting in a more consistently moist and flavorful piece of meat.

BROILING

Description: Broiling is a method that is used to quickly cook meats, poultry, and fish.

Instructions: Simply coat your favorite spice blend or rub onto your meat or seafood and set in refrigerator for 2 hours. Remove the seasoned food from refrigerator and let it sit at room temperature for several minutes before proceeding with your desired cooking method. To operate the broiler feature of your oven, turn the knob counter-clockwise to the “Broil” position. There will be various levels that you can set your broiler pan on and cooking times will vary, depending on the thickness of the food item, fat content, and personal preference for doneness.

Notes: The broiler compartment is usually a sliding unit located beneath your oven. The door will fold down so that you can easily access to the broiling pan to turn the food over.

GRILLING

Description: Grilling is an outdoor cooking method that is based on direct or indirect dry heat. Instructions: Simply coat your favorite spice blend or rub onto your meat or seafood and set in refrigerator for 2 hours. Remove the seasoned food from refrigerator and let it sit at room temperature for several minutes before proceeding with your desired cooking method.In grilling, tender cuts of meat and thick cuts of fish are placed upon a metal wire rack or surface outdoors over heated charcoal briquettes or a gas heated grill.

To light a charcoal grill, arrange enough briquettes spread out onto your pan to exceed the cooking area by 2” all around. Stack the briquettes into a pyramid and coat them with lighter fluid. Wait several minutes to allow fluid to soak into briquettes, and then light with a long match or hand-held igniter (if using pre-soaked briquettes, just ignite after stacking). As the briquettes begin to burn and ash forms on all of the briquettes, arrange briquettes into a single layer using tongs, and set grilling grate over the briquettes. Allow briquettes to obtain a reddish glowing hue before placing food onto grill. This will inform you that the heat is at its optimal cooking temperature.

When using a gas grill, make sure to check all connections between propane tank and grill before turning on grill. For safety reasons, always turn the gas level to a lower setting and press the ignite button to ignite the coils before increasing your heat level. Make sure to replenish your propane tank at most hardware and supply superstores. Please review manufacturer’s instructions prior to operating and cleaning any gas or charcoal grill. Place food items onto grilling grate and cook for several minutes before turning. Avoid turning items frequently as this will slow down the cooking process. Move food away from center of briquettes to cook at a slower rate. Let meat cool 5-7 minutes before cutting to retain moisture. During the cooking process, heat drives meat’s juices from the surface as it cooks and the juices gather in the center and the center becomes saturated. Letting meats “rest” before slicing allows these juices to slowly seep back towards the surface, resulting in a more consistently moist and flavorful piece of meat.

Notes:The choice of using a charcoal or gas grill is entirely up the grillmaster. Whether he or she wants the convenience of a push-button flame courtesy of a gas grill, or the extra pride in properly setting and maintaining a bed of ashen coals, there’s a grill at various price ranges with assorted accessories for everyone.Damp mesquite or hickory wood chips may be added on top of the coals to allow a smoldering effect that provides additional flavor to the food. The high cooking temperatures break down amino acids within the meats, combining with natural sugars, and rise to the surface of the meat to provide the distinctive grilled / browned taste (also known as the Maillard reaction). Tougher cuts of meat should be reserved for slow cooked barbecuing instead of grilling. Occasionally a marinade will help to loosen the toughness of various cuts of meat.

PAN FRYING / SEARING

Description: Pan searing is a method of cooking food where the food is subjected to a high level of heat (450°-500°F) for a short period of time.

Instructions: Simply coat your favorite spice blend or rub onto your meat or seafood and set in refrigerator for 2 hours. Remove the seasoned food from refrigerator and let it sit at room temperature for several minutes before proceeding with your desired cooking method.Using a heavy bottomed skillet or pan will help to distribute the high heat evenly for more consistent searing. Turn stove to medium high and place a small amount of olive oil in the pan. Increase the temperature to high, place food in pan (skin side down first if skin still on), and sear for 1-2 minutes. Flip over food and sear for another minute or until desired doneness. This cooking method may create a brownish-crust on the outside of your food, but it will help to seal in the juices of the meat or seafood item.

Notes: To pan sear, you can use a very hot, heavy bottomed skillet or pan (cast-iron is a good option) over a high flame, under a broiler, or in an oven with a high temperature (450°-500°F).

Ingredients:

1/2 cup of extra virgin olive oil

4 ounces unsalted butter

1 large sweet onion, cut into 1/4-inch dice

2 red bell peppers, deseeded and cut into 1/4-inch dice

1 vine ripe tomato, diced

5 cloves of garlic, minced

A sprig of rosemary

Sea salt and freshly ground pepper

1/2 cup dry white wine

1 small jar of Spanish olives (green olives stuffed with pimientos), drained

2 6-ounce cans of Bumble Bee Prime Fillet Solid White Albacore, drained

1/2 pound rigatoni pasta

1 tablespoon thinly sliced chives

Dry aged parmesan, grated

Pinch of crushed red hot pepper flakes (optional)

Directions:: Bring water to boil in a large pot according to package directions in preparation for cooking the rigatoni pasta. Heat 2/3 of the olive oil and 4 ounces of unsalted butter in a large sauté pan over medium-high heat until nearly hot but not smoking. Add diced onions and cook for approximately 5 minutes until soft. Add diced red bell peppers, reducing to low-medium heat and cook until peppers are soft. Add diced tomato, minced garlic and 1/3 teaspoon of rosemary sprig leaves. Season with sea salt and freshly ground pepper.

Cover and cook over low heat for another 10 minutes. Add 1/2 cup of dry white wine and simmer for 5 minutes. Then, add drained whole olives and Bumble Bee Prime Fillet tuna in solid pieces to sautéed mixture. Cover and cook until tuna is heated through (approximately 3 to 5 minutes).

Cook the rigatoni pasta in a large pot of boiling salted water according to the package directions or until al dente. Drain the pasta in a colander, leaving behind a little moisture. Toss the pasta, tuna sauce and water, then place in a serving dish or on individual plates. Drizzle remaining olive oil over the top and garnish with thinly sliced chives and grated dry aged parmesan. Top with a pinch of crushed red hot pepper flakes, if you prefer a little more bite.

** Delicate, Festive Albacore Tuna Canape

An easy-to-follow, elegant-style canapé for entertaining guests or just treating yourself to a unique way of serving up albacore tuna! Serves 6 to 8.

Ingredients:

1 6-ounce can of Bumble Bee Prime Fillet Solid White Albacore, drained

2 finely diced shallots

1 tablespoon chives, thinly sliced

1 soup spoon crème fraiche

Sea salt and freshly ground pepper to taste

Sourdough bread (optional)

3 ounces of comté cheese or aged white cheddar, sliced thinly

Extra crème fraiche for garnish (optional)

1/2 ounce domestic caviar (optional)

Chervil sprigs (optional)

Directions:: Mix together Prime Fillet tuna, shallots, chives, crème fraiche, and salt and pepper. Spoon mixture onto toasted triangles of sourdough bread or into Chinese ceramic serving spoons. Top each serving mixture with a slice of cheese and place in a pre-heated oven (300 degrees) until cheese begins to melt — approximately 3 minutes. Remove toasties or Chinese spoons from the oven and top individually with a dot of crème fraiche, and then a dot of caviar (optional). Finish with a sprig of chervil to garnish.

** Prime Fillet Albacore Tuna and Potato Casserole

Recognized in Food & Wine magazine’s 2003 Top Ten Best New Wine Lists, Chef Gerald suggests complementing this entrée with a glass of 2001 Turnbull Napa Valley Sauvignon Blanc. Serves 4.

Ingredients:

1/2 cup olive oil

2 large onions, thinly sliced

4 medium Anaheim chilies, seeded and thinly sliced

2 bay leaves

8 garlic cloves, peeled and thinly sliced

2 pounds Yukon Gold potatoes, quartered

1 cup dry white wine

3 cups vegetable stock or canned vegetable broth

6 to 8 saffron threads

1 tablespoon kosher salt

1/2 teaspoon ground white pepper

1 mild dried chili pepper

4 6-ounce cans of Bumble Bee Prime Fillet Solid White Albacore, drained

3 tablespoons chopped fresh parsley

Pinch of piment d’Espelette (Basque chili pepper) or mild cayenne powder

Directions:: Warm 1/2 cup olive oil in a large casserole over high heat. Add onions, Anaheim chilies, bay leaves, and garlic and sauté for 10 minutes. Add the potatoes, wine, vegetable stock, and saffron. Bring to a boil, cover, and reduce heat to medium. Add salt, pepper, and dried chili pepper, and cook until the potatoes are tender, about 15 minutes. Add the tuna and sauté for 2 to 3 minutes, or until warmed through. Stir only occasionally to avoid breaking apart the fish. Season with salt and pepper to taste. Discard the bay leaves before serving. Serve in shallow soup bowls, and sprinkle with the parsley and piment d’Espelette.

I know this first technique may sound unrelated to Southern Cooking , but you will see the connection as we proceed. Here is the first tip, which should be applied to all your recipes, not just Southern Cooking.The Chinese figured this out long ago. Combine sweet and sour in your cooking. That is, in a dish that is intended to be sweet (deserts), add a pinch of salt, vinegar or hot spice. In a dish that is intended to be sour (not sweet), such as vegetables, chili, meats, add sweet. I prefer syrup or molasses rather than regular sugar to add sweetness.As an example, in Southern Recipes, I add a teaspoon of molasses to greens (turnip, collards, mustard), green beans and breakfast gravy. One exception to the adding sweet to sour is in cornbread. If you want real Southern cornbread, never put sugar in it. Sorry, that is not cornbread, it is cake (or Yankee cornbread.) I also add a teaspoon of regular sugar to my cole slaw and chili. Likewise, in all deserts I cook I add a pinch of salt. You are probably aware that most desert recipes call for this anyway. I have discussed the next technique at length in my other articles and on my websites, but it is so important I want to repeat it here. You must use cast iron cookware for most Southern dishes, especially cornbread. First, it is the traditional way to cook Southern. Additionally, the cast iron transfers heat unlike any other material, making it uniquely suited for Southern dishes. So, please use cast iron.This next technique is employed in many Southern recipes. Southerners use cornmeal in many fried dishes to coat the food. This produces a crunchy texture and adds flavor. When frying chicken, coat (batter) the chicken in flour, but add cornmeal to the flour mix at a 3 to 1 ration. In other words 1/4 cup cornmeal to 1 cup flour. Also, fried okra should be coated in a pure cornmeal mix (with salt and pepper, no flour.) Here is the point…experiment a little. When a recipe calls for flour or just because you have always cooked it that way, try substituting cornmeal for flour.Here is something I remember from my grandmother’s kitchen. She was a great cook of traditional Southern food. She made the best biscuits I ever tasted. At first, I thought it was her recipe, until I found out there was nothing unusual about it (I think she got it off a bag of flour.) It was not the ingredients that made them so good. It was the size of the biscuits. I always knew she made bigger biscuits than I was use to but I did not make the connection until after I found out her secret was not the ingredients. Larger biscuits will have more of the soft insides and a larger area outside for the brown crust. They are especially good with gravy or anytime you will be using a sauce. Here is what she did. She rolled out the biscuit dough to about 3/4 inch thickness. Then she used a biscuit cutter that was a little over 3 inches in diameter (who knows where she got it…it was probably a hundred years old.) A word of caution if you use this technique for your biscuits, do not make the dough over 3/4 inch thick. You may think that if 3/4 inch is good, then 1 1/2 inches should be better. Not so. The 3/4 inch rule seems to be the optimum for Fat Biscuits. If you make them much thicker the tops will crack and they will have a doughy flour taste. So, if you are one that has always made slim 2 inch biscuits, give these a try. And, try out the other techniques mentioned for real Southern Cooking.

Coconut Almond Mocha Macaroons Recipe

Macaroons are a Passover favorite for many, who have a sweet tooth. For this new harvest season celebration, I have come up with a new recipe. If you love espresso, and also love coconuts and almonds then you should try this recipe. This is a delicious treat for any and all who love coconut but we are going to spice them up just a little bit, by adding espresso coffee flavor to these little coconut desserts. These mini espresso, coconut and almond macaroons will melt in your mouth, and are made with just a few ingredients. These will take some time so you may want to make these in advance.

Coconut Almond Mocha Macaroons:

1/2 cup honey

1/4 Teaspoon of vanilla bean paste

1/4 cup unsweetened cocoa powder

1 Tablespoon instant powdered coffee or espresso

2 1/2 Cups shredded, sweetened coconut

1 Cup of ground almonds

3/4 Cup matzo cake meal

2 Egg whites

1 Bag of Chocolate covered coffee espresso beans, from your local store or Starbucks has them.

First things first you will line a baking tray with non stick baking parchment paper. You will finely grind the 1 cup of almonds in short bursts in a food processor until they form a fine meal and set aside until ready for them. In a small saucepan you will combine the honey, cocoa powder and coffee powder while cooking and stirring over a low to medium heat until powders are dissolved and mixture is smooth. You will remove from the heat and let cool about 10 to 15 minutes.

While the cocoa mixture is cooling you will place the egg whites in a bowl, and whisk until they form stiff peaks, when they start to get stiff you will start to gradually add the sugar, and you will continue whisking until it forms a thick and shiny or glossy meringue.

You will then stir in the coconut, matzo cake meal, vanilla bean paste, and ground almonds into the somewhat cooled espresso mix, and stir for about 30 seconds or so. You will then start to combine the glossy egg whites in thirds until well-folded in. When ingredients are well mixed you will spoon out about one tablespoon of the mixture and roll into a ball. You will place the macaroon balls on the parchment-lined baking sheet. You will continue to repeat with remaining dough, placing the macaroon balls about one inch apart. You will press one of the coffee beans into the middle of each macaroon ball.
